Description

A versatile sauce with dehydrated mushrooms that offers a delicate mushroom flavour. It can be used as an alternative to meat-based stocks and is suitable for a variety of dishes. It works well as a sauce for pasta, poached veal, poultry, lamb, and white ragouts.



Preparations

Yield: 12.6 L

95 g of powder to 800ml water and 200ml cream.

Blend required amount of sauce powder into lukewarm water while stirring well with a whisk. Bring to boil and stirring constantly. Reduce heat and simmer for 4 - 5 mins, stirring occasionally. Add cream and bring to a quick boil again while stirring constantly.
